A remarkable book. This book is more than a cookbook. The author James Oseland explains much of the history as well as the cooking techniques and ingredients before digging into the actual recipes. The section on sambals and other side dishes is wonderful just on its own but there is much more here. In addition to the stellar information the book is beautifully laid out and photographed. Some of the ingredients are a little hard to find in an American market. Happily, Oseland also gives information on substitution.
